like most trades you learn far more from practical application like a job. that being said there is theory and the type of technical knowledge that separates the men from the boys. could a person be a great chef without the school? yes as it is passion and desire that fuel a person
What's the Deal with Culinary School?
The Atlantic asks: "Does culinary school matter?" I mean -- hello -- can't you learn all that stuff on Twitter, anyway?

I don't think that the nation's top chefs would agree. But at the same token, many of these schools are selling "the cooking dream," which can be misleading for the uneducated person looking for more career that won't lead to further financial duress...
perhaps this is true but many of the big chefs have a vested interest in these schools and obviously the business in general which is at a very high point. that being said I agree that the one thing I didn't learn at cooking school was how hard it is to make money in the business. and yes the cooking dream which I hold right up next to professional athletes with the thought that we see the pros and think this is how it is at every level which in the cooking industry could not be further from the truth, I think if you meet a chef who's not on TV but is trying to make the honest buck you've met a person who loves what they do because it's not the money that has them there
