My Struggle With Guanciale
The Morning News has published an article I wrote on the trials of making guanciale (cured pig's jowl) at home.
Lest you think I have succumbed to a strange diet consisting only of cured meat and fish, please note that the timing of yesterday's piece about gravlax and the publication of the above article is purely coincidental.
