Shopping List: Maya Kaimal's Fresh Indian Simmer Sauces

Cookbook author Maya Kaimal has created a line of heat-and-serve sauces that offer a shortcut to a home-cooked Indian meal. Her Fresh Indian Simmer Sauces come in three flavors: Tikka Masala (above), Coconut Curry, and Vindaloo. Combine one of the sauces with chicken or shrimp and vegetables, simmer for 20 minutes (or less), and dinner is served.

I mixed the Tikka Masala version with lightly sautéed chicken, carrots, onion, and zucchini, let it simmer uncovered over a low flame, and then served the dish alongside steamed basmati rice, but the flavorful sauces may also be put to other uses. As Florence Fabricant suggests, "Consider spreading the Vindaloo on a sandwich of cold roast lamb, slathering the Coconut Curry on fish before broiling it, or making huevos rancheros Indian style with the Tikka Masala on an Indian flat bread like nan." Mmmm.

Maya Kaimal's Fresh Indian Simmer Sauces are $4.99 for a 15 ounce container at Gourmet Garage stores, multiple locations.

i remember having a tikka massala chicken sandwich were the tikka sauce was mixed with mayonnaise and later mixed with chicken. chill it in the fridge and put it in the sandwich for the meal.

Now I'm feeling the inspiration to make a grilled chicken tikka masala panini on nan! They make such nanini (or nanwiches) at a place here called the Indian Bread Company, though I've never been.

Hi Margararet,
I just bought this sauce at Bierkraft in Brooklyn for $5.95, and believe me, it's worth the markup. I guess you can also get it at Gourmet Garage for $4.99, which has outlets in Soho, the East Village, and some other parts of Manhattan. Good luck!

For dinner last night, I made chicken tikka masala with Maya Kaimal's prepared sauce. It was superb; as good as any at an upscale Indian restaurant. I've also tried making my own curries but it is no longer worth the effort. Next, I plan to marinate shrimp in the coconut curry and then cook them on a barbecue grill. I'm looking forward to seeing more sauces avaiable (e.g.korma, dhansak).

We bought the vindaloo and coconut sauces last night at Whole Foods in Cambridge MA and had a great dinner last night. They are selling fast there, and I am so glad I can have indian food without having to slave over the stove all day.

I'm at my desk devouring leftovers from last night's delish coconut curry dinner, and it is still spectacular! The sauce has a delicate flavor, and enhances rather than overwhelms the veggies.

I'm looking forward to trying the other varieties--I haven't seen them at my local Whole Foods in the Santa Rosa area, but they are available in our local high-end grocery store, Fiesta Market (Sebastopol).
